!!!sLaCkEr!!!

I sent a text out to everyone earlier today. I hope you all received it!  I again apologize for the past few weeks!  SO SORRY EVERYONE!!!  But, weights are up!!!!!  YAY!!!!!  I have this weeks weights and rankings up on the sidebar.  I am still goin to post the weights for the past two weeks, but not tonight.  I teach in the morning and need to function as a mom.....and this mom doesn't function without sleep!!!!  :)

GOOD JOB EVERYONE with the results thus far!!!  Keep it up for a few more weeks!  Hopefully everyone is feeling better, healthier, and happier!!!

I'll figure out a final weigh-in time for our last weigh-in.  Remember, to be eligible for the winnings, first and last weigh-in must be done at my house (or Angela's). We'll get the details for that last weigh-in up soon!

Some Recipes just for Haylee... and the rest of you!

I heard your cry, Haylee! The frantic cry of a mother trying to watch her calories as her children beg for chicken nuggets. Never has processed food looked so appealing, am I right? Here is my Recipe Book blog. It's very boring, not like the ones you'd see on Pinterest. I have no energy for that. I just got tired of searching through cards and recipe books trying to find that recipe I tried once that was so good. I have compiled many of my favorites as I use them onto this blog. There are a few yummy low-calorie options on there, too. I'll be posting a lot more during this challenge.
Anyway, this is not to advertise my blog or anything. Like I said, it's nothing worth "pinning", just where I keep those recipes I like.

Lentil Soup with a Hint of Fruit

A friend of mine, who happens to be a dietician, recently shared this recipe with me. It has become a go-to winter soup for me and my family. I don't know the nutritional value, but it has be low in calories based on the ingredients. Not only does it have to be low in calories but it is inexpensive and easy to make. I usually put the leftovers in the fridge and they make yummy, quick lunches. I'm not sure what the serving size is, so I eat one cup. It is really filling.

2 c. red or brown lentils, rinsed and picked over
8 c. water (maybe more)
2 c. minced onion
2 tsp. ground cumin
2 tsp. dry mustard
2 Tbsp. minced garlic
1 c. minced dried apricots
1 1/2 to 2 tsp. salt (to taste)
3 to 4 Tbsp. balsamic vinegar (or, to taste)
black pepper and cayenne to taste

Optional garnishes: Extra slivers of dried apricot, a drizzle of yogurt, a sprig or two of cilantro or parsley

1. Place the lentils and water in a soup pot or dutch oven and bring to a boil. Cover, lower heat to a simmer, and cook for about 15 minutes. Add the onion, cumin and mustard, and continue to simmer, covered, until the lentils are very soft (about 15 more minutes.) Add small amounts of additional water, if it seems too thick.

2. Add the garlic, apricots, and salt, cover, and let sit for another 15 minutes or so. Stir in the vinegar, black pepper, and cayenne to taste (and correct the salt too, if necessary.) At this point the soup will keep for several days.

I feel like it is my secret weapon during this competition, but I decided to share.
